If I breed my solar eevee with another pokemon in the fairy egg group, can I get a shiny solar eevee? Would there be a risk of breaking my chain and should I just get another solar eevee? Thank you!

The parent Pokemon do not change your chance for a shiny. BUT if you breed a Solar Eevee with a different Pokemon (except for Ditto), you will get Eevee eggs, Solar Eevee eggs AND the other parent Pokemon eggs.
When hunting Event Pokemon, you should always scan the eggs before adopting, because even if you use 2 Solar Eevees, you will still get mostly Eevee eggs and rarely Solar eggs. Hatching an egg that is NOT a Solar Eevee WILL break your chain.
