Hey guys I am new here and I was wondering will this go on to be like a normal Pokemon game including catching and battling or will it just be hatching eggs and completing quests?

You can't actually fight wild Pokemon or NPCs, they don't exist. You can catch Pokemon at honey tree, but it's not like catching them in the games. You have more to do than just hatch eggs and quests, my main goal here is to complete all dexes, roleplay and get more shiny Mew's, but you can do other things too.
